The grapes are handpicked at optimal ripeness before being chilled and crushed. We use a basket press to softly extract the juice before it is transferred into a stainless steel tank and a used French oak barrel. Wild fermentation is encouraged. Once the fermentation has finished, we leave it on its lees for a short period of time before blending and bottling.

Colour: Pale straw

Aromas: Complex combination of toasty notes and hints of cashew creaminess. Lemon verbena and delicate citrus of lime and mandarin.

Palate: Generous, textural and weighty palate with pithy grapefruit, finger limes. Fresh acidity giving height and direction. The finish is satiating with varietal salinity.

Fiano a “classical vine” of southern Italy that likely has its origins in ancient Roman viticulture and perhaps may have even been cultivated by the ancient Greeks before them.  The Fiano vines are planted at the highest point of the vineyard, and cooled by our fresh afternoon sea breeze coming off the pristine Geographe Bay. Fiano is characterised by the chalky minerality and citrus acidity you can expect from this classical vine.
