“Great Wines Begin in the Vineyard”

Our small boutique winery realises the potential of the fruit in crafting excellent wines.  All wine is made on the property and the majority of fruit used in the wines is from the property.  Our vines are producing fruit primarily of Spanish and Italian origin.  These varieties suit our Mediterranean climate and our wines and overall ethos reflect these Southern European characteristics.

Ashley, in conjunction with consultant winemaker Vanessa Carson, uses traditional European  winemaking techniques and minimal intervention to ensure wine true to its original flavour.   All fruit is handpicked so enters the winery in full bunches and is soft basket pressed.

The majority of our grapes are hand picked in the vineyard, and arrive in the winery after coming off the vine, ready for crushing or cold maceration.

Grapes are crushed or placed in cold maceration for up to 3 days.

Once complete ferments are soft basket pressed, using traditional methods which best express the natural characters of the fruit.


The fermentation process is carefully monitored and managed by our resident winemaker Ashley, in conjunction with consultant winemaker Vanessa Carson.
